Mark Sargeant or 'Sarge' as he was first called by Gordon Ramsay, headed back to his Kentish coast roots to open his own fish centred restaurants after running the Claridge's restaurant for Ramsay.
Now, he's ready to create fresh waves in London with his partners Ampersand Catering and a menu of Brit-centric dishes. Sarge promises it won't be summarily off with your head if you dither over deciding what to order.
