It's now hard to believe that Pitt Cue really did start operating out of a tiny street food truck on Waterloo's South Bank. Fast forward, after building up a cult followng at their first Soho bricks and mortar site, Pitt Cue's Tom Adams and Jamie Berger now have a 19th century warehouse complete with brewery between Shoreditch and the City.
Trailblazers in using fire to provide flavour and smoke, they believe different woods can make as much difference as the nuances of different berry fruits in wine-making. At Pitt Cue, wood fire open flame cooking is at the heart of the restaurant.
Much of their meat comes from their own Devon farm, including their beloved Mangalitza pork – the loin chops are magnificent – and they source dry-aged rare breed beef.
Besides their own beers, the drinks list favours rum, American whiskey and mescal, which Pitt Cue believe are the best accompaniments to wood-fired cuisine.
