Spanish and Italian open wood-fired cooking is the speciality of this lively Soho outpost of the Salt Yard Restaurant group. At Ember Yard's heart is a bespoke Basque grill fuelled with single species charcoal and wood from Kent.
Most diners prefer to perch on stools at high counters with a good view into the fiery open kitchen. The iberico press with whipped butter is a must. Equally wonderful are char-grilled prawns with pan con tomate, lemon, chilli and parsley, as well as Delice pumpkin with buffalo ricotta and salsa verde.
In season, calcots are served with smoked almonds and romesco sauce.
Even the cocktails are smoked – smoked negroni is made with smoked ice and grilled orange garnish and is so compelling that one is never enough.
A small caveat: diners emerge with the wood aroma deeply imbued in clothes and hair, some consider this sexy, others may esent a trip to the drycleaner.
