Self-taught chef, Ben Chapman was fired up and inspired by his travels in South East Asia. He cooks Northern Thai and Burmese clay-pot dishes over charcoal, using British grown ingredients – even Thai herbs are produced in the UK.
Must order is the heady long pepper flavoured pork belly with crab and glass noodles. Also try the cumin lamb skewers cooked until barely pink. A real menu understatement, red curry mackerel, has a brilliant mix of dill, lemongrass, all manner of spices and tastes like a warming winter blanket with deep flavour. Superb too are the oyster mushrooms and grills with lime, soy and chilli. It's best to sit up at the counter to really appreciate the spectacular culinary action. The chefs juggle lumps of red-hot charcoal to control the heat and cook on clay pots and iron woks as if they are at a night market or a roadside vendor in deepest Thailand. It is mesmerising.
Kiln has a no booking policy, though the form is to turn up early in the evening and reserve your slot, then go off to a local bar for an hour or more until summoned to the counter. It truly is worth the wait.
