The chef that Masterchef Professional Marcus Wareing can't be without: Chantelle Nicholson, Tredwells
Former lawyer, Chantelle Nicolson is an incredible force of nature. She is not only executive chef of all Marcus Wareing restaurants (an exacting judge to work with) but also exec chef of Tredwell's which she has transformed.
Although, Chantelle is not vegan herself and Tredwell's menu serves impeccably sourced meat and fish, she is hugely interested in vegetables and the benefits of eating more. Think English asparagus, Welsh rarebit and rye crumbs, chickpea panisse with roast onions mint salsa. Planted is Chantelle's first cookbook and it is totally vegan and an absolute revelation.
Chantelle runs lots of supper clubs and collaborations with her chef friends including Peter Gordon.
