Epoch-defining dining is at the core of Heston Blumenthal's restaurant Dinner. It is brilliantly run by exec chef Ashley Palmer-Watts, whose meticulous attention to historical as well as culinary detail is mightily impressive. And, yes, you can watch the finishing touches being made to that most instagrammed meat fruit. The chef's table is directly opposite the custom-built show kitchen and sits 4 – 6 guests. There's a dedicated sommelier as well.
Dishes are incredible and each comes with the date of its first historical creation. Authentic dishes come with a contemporary edge and include: rice and flesh with saffron calf's foot, dating back to 1390; salmagundy with chicken oysters, salsify and horseradish cream from 1720; powdered duck with cherries; and a tipsy cake with spit roast pineapple.
Reservations for the chef's table can be made 6 months in advance and you will need to contact the restaurant directly.
