Spalding, who is famous for his innovative PuzzleProjects dining service, describes the pop-up as 'high energy punk tapas' – we've seen that before in London - but here Ben is fusing the informal street food market vibe with the feel of an upmarket restaurant.
On the menu in the restaurant are Ben's typically eccentric dishes which use British ingredients in unusual ways. Playing with antiquated ideas of flavour, there is a duck breast cooked in a chocolate salt crust (which we can't get off our minds), as well as his famous 'Chicken on a Brick' sandwich, and the chicken skin sandwich – where skin replaces bread.
The pop-up is split into a bookable mezzanine and a no-reservations terrace bar. In the bookable restaurant, guests' experiences are simplified by a set price (£28) menu which includes any four dishes.
If you haven't pre-booked then dishes at the terrace are cooked on a charcoal oven and include barbecue crack rib for two, monkfish roasted on the bone and charred lamb steak.
Last Days of Shoreditch has rooms dedicated to iconic musicians, including Bowie, that you can privately hire, as well as live DJs and five walk-up bars with best craft beer, local wine and cocktails.
