Scout by Matt Whiley, cocktail bar, Shoreditch

Matt Whiley is famous for being one of London's best mixologists, though his pseudonym – Talented Mr Fox – precedes him. Performing under that award-winning moniker, Whiley has curated the drinks at famous London restaurants such as Fera at Claridge's, Bone Daddies and Hoppers.

Having built a strong reputation, Whiley is at last launching his own bar. Scout, on Shoreditch's Great Eastern Street, will have a seasonally rotating drinks menu, with a focus on the best of British ingredients.

With the ever-changing seasonal cocktail list, Whiley is borrowing a trick from restaurateurs, translating seasonality from the kitchen to the bar.

And the cocktails at Scout's will use only sustainable ingredients that will be largely distilled, fermented and brewed in an on-site 'Laboratory'.

The refined cocktail menu will feature only 10 seasonal sups, five beers (one brewed in-house) and five natural wines.
