Founded along with Magnus Villnow, whom he met at the Michelin starred F12, the pair focus on the multiplicity of uses for vegetables. They decided to come up with GRO, 'where availability and closeness rule'.
The pair are now fully booked for the next three months, with fresh seasonal ingredients and a strong focus on vegetables, the pair have some imaginative creations. Healthy restaurants in London just got a new competitor.
Brussel sprouts meet pumpkin and bread spice in one of GRO's delectable dishes: the pair will also be serving up an intriguing combination of red beets, elderflower and oysters. There's a main course of swede, pork belly and mustard, which sounds a succulent treat, and to finish off their well crafted menu is a combination of blueberries, oats and cardamom.
