He's not afraid to put his eponymous kitchen up to scrutiny. On a day to day basis, it's run by chefs Shauna and Mark Froydenlund who share the same intensity and uncompromising emphasis on perfection as Marcus. They're a couple in the kitchen and by marriage. It's a rare chance to marvel at true culinary dexterity and the most rigorous classic techniques.
Unusually, the chef's table is not in the kitchen rather in pride of place among the buzz of the elegant main restaurant yet positioned above – almost as if you, the cosseted diner, are in judgement.
The sommelier can arrange wines to suit any budget.
5 course tasting menu (lunch only, Jan - Oct) @ £105 per person
8 course tasting menu (lunch and dinner) @ £120 per person
Currently, there's a special 5 course menu Mon-Fri lunch and Mon-Tues dinner @ £69 including a copy of Marcus' New Classics book. This menu gives all the key chefs in the kitchen team a chance to highlight their seasonal favourite dishes from Shauna's incredible malt loaf to Marcus' 36 hour Melford Farm (his own farm which supplies much of the restaurant's produce) lamb with a distinctive twist on potato gratin dauphinois.
