Prawn Noodle Soup Recipe, from cookbook 'The Only Recipes You'll Ever Need' Cookbook
A quick recipe for a healthy prawn noodle soup, from Tony Turnbull's new cookbook, 'The Only Recipes You'll Ever Need'
PRAWN NOODLE SOUP
800ml chicken stock
2 small red chillies, halved
4 cm knob of ginger, grated
2 lemongrass stalks, bruised
4 tbsp fish sauce
4 tbsp lime juice
1 tbsp sugar
100g mushrooms, sliced
150g rice noodles
250g cooked prawns
A handful of coriander, roughly chopped
METHOD:
1. Simmer the stock for 5 minutes with the chillies, ginger, lemongrass, fish sauce, lime juice and sugar. Strain and return the stock to the pan.

Add the mushrooms and noodles and cook for 5 minutes. Add the prawns and warm through for 1 minute. Serve with a sprinkling of the coriander.Serve.
