Until January, British meat experts, Featherblade, will be taking over the kitchen at the Star of Bethnal Green. Founded by two ex-bankers, the pop-up chop house intends to introduce diners to lesser-known, and thus better value, cuts of meat. Their name embodies this aim, belonging to the butchers’ beloved Featherblade steak, which has largely been neglected by modern cuisine.
Working to ensure the tastiest cuts reach the table will be their head chef, Jessica Simmons, an exciting new talent who has worked under Angela Hartnett at the Michelin-starred Murano in Mayfair, and Emma Duggan at the acclaimed Whitechapel Gallery restaurant. Each cut of meat is accompanied by one of their house relishes, which include garlicky Salsa Verde or a red pepper and almond romesco-style sauce.
