Prawn Noodle Soup Recipe, from cookbook 'The Only Recipes You'll Ever Need' Cookbook
A quick recipe for a healthy prawn noodle soup, from Tony Turnbull's new cookbook, 'The Only Recipes You'll Ever Need'
This prawn noodle soup recipe is light and simple, but packed full of delicious Asian flavours. It can be completed in 10 minutes, so it is a perfect recipe for a quick and easy supper.
PRAWN NOODLE SOUP
INGREDIENTS:
800ml chicken stock
2 small red chillies, halved
4 cm knob of ginger, grated
2 lemongrass stalks, bruised
4 tbsp fish sauce
4 tbsp lime juice
1 tbsp sugar
100g mushrooms, sliced
150g rice noodles
250g cooked prawns
A handful of coriander, roughly chopped
METHOD:
1. Simmer the stock for 5 minutes with the chillies, ginger, lemongrass, fish sauce, lime juice and sugar. Strain and return the stock to the pan.
2. Add the mushrooms and noodles and cook for 5 minutes. Add the prawns and warm through for 1 minute. Serve with a sprinkling of the coriander.
Serve.
