Unique Japanese supper club Monograph brings a food event London gastronomes will be raring to attend.
Shoreditch supper club, Monograph, offers guests the unique opportunity to sample a tasting menu of contemporary Japanese cuisine in an intimate studio setting. Though the menu changes each month, it will typically include dishes such as foil baked shimeji mushrooms on soft tofu with ponzu, and an exquisite saikyo-miso marinated salmon. Another signature dish isChawanmushi, a savoury egg custard with a distinct umami taste, served hot with prawns and kamaboko, a cured white fish.
Each dish is accompanied by a short explanation about the food, and presented with immaculate care and attention to detail. We particularly like that the soy sauce is served in individual little spray bottles, a simple way to ensure that the delicate flavours never became saturated by a spillage. After months of research in attempting to find a balance between simplicity and uniqueness, for their next supper club Monograph bring diners a finalised recipe for Japan-imported Sanuki Udon, which is accompanied with an umami-rich dashi broth, thin slices of pork belly and steamed, perfectly-in-season curly kale.
Though Monograph’s food is almost too lovely to eat, each dish will delight and inform. Guests will come away both thoroughly content and that little bit more knowledgeable to boot.
