Shoreditch's latest restaurant opening is inspired by East London's apothecary heritage.
New restaurant, Shoreditch: Healthy and Invigorating
London’s Silicon Roundabout has just welcomed a new restaurant at the M by Montcalm hotel. Inspired by the area’s now distant past, Tonic & Remedy showcases the best in healthy and invigorating cuisine.
Paul Welburn (former Head Chef at Michelin-starred Rhodes 1) and award-winning bar manager Jeremy Pascal have teamed up to open Tonic & Remedy, where the focus will be on a refined menu rather than typical 'fine dining’. The restaurant has just opened inside M by Montcalm, in their state-of-the-art modernist building on City road, inspired by the artwork of Bridget Riley.

Welburn and Pascal’s new venture is an homage to the heritage of Shoreditch area, which was London’s capital of lotions and potions, home to medicine makers and apothecaries by the cauldronful during the 18th and 19th centuries. As such, the dining menu takes its cue from unusual blends of herbs and spices, to create classic dishes with an innovative twist.
But thankfully the atmosphere at Tonic & Remedy will be decidedly un-stuffy; Welburn wants diners to feel relaxed, feasting on a selection sharing plates.
The choices range from the time-honoured classics like shepherd’s pie to some original and off-the-wall offerings such as the intriguing jelly and seaweed scones – Welburn’s nod to the notorious East London jellied eels (but hopefully with a little less slime). All the dishes will be made using ingredients sourced from specially selected ‘small and interesting suppliers’, including Lake District Farmers and The Bread Factory.
Jeremy Pascal has a long-standing passion for herbal liquor, and his cocktail menu has something surprising for all palates; the Apothecary cocktail is flavoured with rosemary and sweetened with peach butterscotch jam. For those of you with a taste for sour, their Patience & Thyme, an infusion of gin and thyme with smoked egg (yes, smoked egg) should be an experience out of the ordinary.
