Ben Spalding, chef and innovator known for his time at Roganic and pop-up restaurants Stripped Back & No Rules joins forces with The Laundry restaurant, London Fields, for exciting new residency.

Introducing Ben Spalding at The Laundry restaurant: East London is proudly welcome one of the best young British talents. From the beginning of February through to March, Ben Spalding will be taking up the kitchen at the Laundry in London Fields: where to eat this weekend has never had a simpler solution. Having honed his skills in excellent restaurants in London including Michelin-starred kitchens at the Fat Duck to Le Manoir, Spalding’s refreshing take on fine dining makes this solo venture an unmissable addition to the city’s culinary scene – one of the most interesting upcoming events in East London this month.
Spalding has worked at some of the best restaurants in London, and the indeed the country, and the now fully risen culinary star turned his attention to his own projects, Stripped Back & No Rules, last year to great success: pop up events London gastronomes loved for their committed to fine dining without pretension. Now the Laundry, one of the top rated London restaurants, sees Spalding bringing a daily changing menu to their stylish London Field's venue, with his famous tasting menus available on weekends, evening a la carte, simple daytime offerings and 'bountiful Sunday roasts.'
His focus is to bring the imaginativeness of haute cuisine to the public at an affordable price, using his experiences from Michelin-star restaurants to serve up high quality, quirky dishes to a much wider audience.
The Laundry aren't giving anything away of Ben's tasting menu, but the dinner – with all mains on offer priced at under £20 – features a range of delectable offerings including a rag of Cumbrian lamb shoulder and neck with roasted cous cous, wilted park choi and redcurrant jam. Another dish on the menu that caught our eye was the cured & poached salmon with toasted almonds, miso, ginger and overripe mango – an eclectic combination of flavours that has Spalding's name all over it. There's also an intriguing take on lasagne, made from Portland white crab, with charred & sweetened Sicilian blood oranges and sauced with an intriguing tarragon-flavoured langoustine.
