Kurobuta, Marble Arch
Devastatingly popular Chelsea pop-up, Kurobuta, has recently launched its permanent residence within Connaught Village, a short walk north from Marble Arch. Kurobuta, translating as ‘black hog’ (a breed of pig, chocker-block with flavour), is headed by ex-Head Chef of Nobu, Australian-born Scott Hallsworth.
The interior is designed around an ‘izakaya’, the Japanese equivalent of a pub. It lacks even a hint of retention with exposed light bulbs and clutter-free wooden tables decor. However, although the atmosphere is casual, Hallsworth maintains a sensational refined quality of flavour that is usually found in Michelin-starred establishments. The menu is divided into Snacks, Cold-Raw-Salad, Robata BBQ, Junk Food Japan, Something Crunchy, Significant Others and Sushi.
The fusion of East and West is best encapsulated in dishes, such as tuna sashimi pizza with truffle ponzu, red onions and green chillies, and Wagyu beef sliders in a brioche bun with crunchy onions, pickled cucumber and Umami mayo. Other recommendations are the tea-smoked lamb with smokey Nasu and spicy Korean miso, and BBQ pork belly in steamed buns with a spicy peanut soy. An extensive list of sake is also on offer.
