The Indigo menu is entirely dairy and gluten free – but this hasn’t prevented the chefs from crafting an abundance of interesting and innovative dishes. The starter of quinoa salad with pomegranate and artichoke is as colourful as it is delicious, whilst a slightly less adventurous offering of chicken and leek terrine is pepped up by its rich truffle mayonnaise. A main course of Bloxham monkfish braised in lemongrass coriander and coconut milk is Indigo's pièce de resistance.
The Rhug lamb rump is cooked to perfection, simmering a brilliant and unusual jus crafted from aubergine and capers, and accompanied by a generous serving of samphire. The dish’s only failing is perhaps the smoked aubergine – though it makes for a fantastic textural contrast with the lamb it lacks flavour, neither tasting smoked nor roasted. As a final flourish, the dessert of Polenta cakes with Oranges and pistachios is delicious and light, the latter a requisite after the generous portions to be found in Indigo.
